Preparing the Filling

Sauté the Vegetables

In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

Add Vegetables

Add the julienned carrots, bell peppers, and shredded cabbage to the skillet. Stir-fry for about 5 minutes until they are tender but still crisp.

Season the Filling

Stir in the chopped green onions, soy sauce, sesame oil, salt, and pepper. Cook for an additional 2 minutes, then remove from heat and let cool.

Assembling the Spring Rolls

Prepare the Wrappers

Lay one spring roll wrapper on a clean surface, with one corner pointing toward you.

Add Filling

Place about 2 tablespoons of the vegetable filling near the corner closest to you. Fold the corner over the filling.

Roll the Wrapper

Fold in the sides of the wrapper and continue rolling tightly until you reach the opposite corner. Seal with a dab of water.

Repeat

Repeat the process with the remaining filling and wrappers.

Cooking the Spring Rolls

Heat the Oil

In a deep pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Spring Rolls

Carefully add a few spring rolls to the hot oil, making sure not to overcrowd the pan. Fry for 3-4 minutes until golden brown and crispy.

Drain and Serve

Remove the spring rolls with a slotted spoon and drain on paper towels. Serve hot with your favorite dipping sauce.
