Method

Cooking the Pasta

Boil Water

In a large pot, bring 4 quarts of water to a boil. Add 1 tsp of salt.

Cook Pasta

Add 2 cups of pasta to the boiling water. Cook according to the package instructions until al dente, usually about 8-10 minutes. Stir occasionally.

Drain Pasta

Once cooked, drain the pasta in a colander and set aside.

Preparing the Vegetables

Chop Vegetables

While the pasta is cooking, chop the zucchini and bell pepper into bite-sized pieces. Halve the cherry tomatoes and mince the garlic.

Sauté Vegetables

In a large skillet, heat 4 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

Add Vegetables

Add the chopped zucchini, bell pepper, and halved cherry tomatoes to the skillet. Sauté for 5-7 minutes until the vegetables are tender.

Add Spinach

Stir in the spinach and cook for an additional 2-3 minutes until wilted. Season with 1 tsp of black pepper.

Combining Ingredients

Combine Pasta and Vegetables

Add the drained pasta to the skillet with the sautéed vegetables. Toss everything together to combine.

Serve

Remove from heat, sprinkle with 1 cup of grated Parmesan cheese, and toss again. Serve warm.
