Tequila Blanco Avion Preparation

Harvesting Agave
Harvest mature agave plants, typically after 7-10 years of growth. Remove the leaves to reveal the piña (heart).

Cooking Agave
Cook the piñas in an autoclave or traditional brick oven at a temperature of about 85°C for 24-48 hours to convert starches into sugars.

Mashing
Once cooked, crush the piñas to extract the sweet agave juice. This can be done using a mechanical shredder or a traditional tahona (stone wheel).

Fermentation
Mix the agave juice with water and add the yeast. Allow the mixture to ferment in a controlled environment for 5-7 days.

Distillation
Distill the fermented liquid twice in copper pot stills to obtain the desired purity and flavor profile.

After distillation, the tequila is bottled directly, retaining its clear color and fresh agave flavor.
