Milling the Grains
Mill the corn, rye, and malted barley together to create a coarse flour known as grist.
Cooking the Mash
In a large mash tun, combine the grist with hot water and heat to convert the starches to sugars. Stir the mixture and maintain a temperature of around 150°F (65°C) for about an hour.
Fermentation
Transfer the mash to a fermentation tank and add the yeast. Allow it to ferment for about 3-5 days, during which the yeast will convert the sugars into alcohol.
Distillation
After fermentation, transfer the liquid (wash) to a still. Distill the wash in a pot still to separate the alcohol from the mash. Collect the distillate, also known as 'white dog.'
Aging
Pour the white dog into new charred oak barrels for aging. The bourbon must be aged for a minimum of two years, but Woodford Reserve is typically aged for four years or more.
Bottling
After aging, the bourbon is filtered and diluted with water to reach the desired proof before being bottled for sale.
