Method

Preparation

  1. 1

    Harvesting Grapes

Harvest Quebranta grapes from the vineyard, ensuring only the best quality grapes are selected.

  2. 2

    Crushing Grapes

Crush the harvested grapes to extract the juice, using a traditional grape crusher or a wine press.

  3. 3

    Fermentation

Transfer the crushed grapes and juice into a fermentation vessel. Add yeast to initiate fermentation. Allow to ferment for about 10-14 days at a controlled temperature.

  4. 4

    Distillation

Once fermentation is complete, distill the fermented mash using a copper pot still to produce the pisco. Collect the distillate carefully.

  5. 5

    Aging

Transfer the distilled pisco into French oak barrels for aging. Allow it to age for a minimum of 3 years to develop flavors.

  6. 6

    Bottling

After aging, filter the pisco and bottle it. Label the bottles with the vintage year (2015) and store appropriately.
