Quesadilla Preparation

Heat the Pan
In a large skillet, heat 1 tablespoon of olive oil over medium heat.

Assemble the Quesadilla
Place one flour tortilla in the skillet. Sprinkle 1/2 cup of the shredded cheese evenly over the tortilla. Add half of the sliced jalapeños on top of the cheese. Place another tortilla on top.

Cook the Quesadilla
Cook the quesadilla for about 3-4 minutes or until the bottom tortilla is golden brown. Carefully flip the quesadilla using a spatula and cook the other side for another 3-4 minutes, or until the cheese has melted and the tortilla is golden brown.

Remove and Slice
Remove the quesadilla from the skillet and let it cool for a minute. Slice into wedges and repeat the process with the remaining tortillas, cheese, and jalapeños.

Prepare the Salsa
In a medium bowl, combine the diced tomatoes, chopped red onion, chopped cilantro, lime juice, salt, and pepper. Mix well until all ingredients are evenly combined.

Taste and Adjust
Taste the salsa and adjust seasoning with more salt or lime juice if necessary.
