Preparing the Pulled Pork

Cook the Pork
In a large skillet or slow cooker, heat olive oil over medium heat. Add the chopped onion and minced garlic and sauté until softened, about 3-4 minutes.

Season the Pork
Season the pork shoulder with salt, black pepper, and cayenne pepper. Place the pork in the skillet or slow cooker.

Add BBQ Sauce
Pour the BBQ sauce over the pork, ensuring it's well-coated. If using a slow cooker, cover and cook on low for 8 hours or high for 4 hours. If using a skillet, cover and cook on low heat for about 2-3 hours, turning occasionally.

Shred the Pork
Once cooked, remove the pork from the skillet or slow cooker and shred it using two forks. Return the shredded pork to the sauce and mix well.
Assembling the Nachos

Preheat the Oven
Preheat your oven to 350°F (175°C).

Layer the Chips
On a large baking sheet, spread out the tortilla chips in an even layer.

Add Pulled Pork
Spoon the shredded pulled pork evenly over the tortilla chips.

Add Cheese and Jalapeños
Sprinkle the shredded cheese generously over the pork, then add sliced jalapeños on top.

Bake
Bake in the preheated oven for about 10-15 minutes, or until the cheese is melted and bubbly.

Serve
Remove from the oven, top with dollops of sour cream and chopped cilantro. Serve immediately and enjoy your pulled pork nachos!
