Method

Cooking Pasta

  1. 1

    Boil Water

In a large pot, bring 4 liters of water to a boil. Add 1 tsp of salt to the boiling water.

  2. 2

    Cook Pasta

Add 300 grams of pasta to the boiling water. Cook according to package instructions until al dente, usually about 8-10 minutes.

  3. 3

    Drain Pasta

Once cooked, drain the pasta in a colander and set aside, reserving a small cup of the pasta water.

Cooking Vegetables

  1. 4

    Prepare Vegetables

While the pasta is cooking, wash and chop the zucchini, bell pepper, carrot, and broccoli into bite-sized pieces.

  2. 5

    Sauté Vegetables

In a large skillet, heat 4 tablespoons of olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.

  3. 6

    Add Vegetables

Add the chopped zucchini, bell pepper, carrot, and broccoli to the skillet. Sauté for about 5-7 minutes until the vegetables are tender but still crisp.

  4. 7

    Add Cherry Tomatoes

Add the cherry tomatoes to the skillet and cook for an additional 2-3 minutes until the tomatoes start to soften.

Combining Ingredients

  1. 8

    Combine Pasta and Vegetables

Add the drained pasta to the skillet with the sautéed vegetables. Toss everything together to combine.

  2. 9

    Season

Add black pepper and chopped fresh basil. If the mixture seems dry, add a splash of reserved pasta water. Toss again to combine.

  3. 10

    Serve

Serve the Pasta Primavera hot, topped with grated Parmesan cheese.
