Main Ingredients

Method

Preparation

  1. 1

    Prepare the Marinade

In a small bowl, combine olive oil, lemon juice, minced garlic, salt, and black pepper to create a marinade.

  2. 2

    Marinate the Salmon

Place the salmon fillets in a shallow dish and pour the marinade over them. Make sure the fillets are well-coated. Cover and refrigerate for at least 30 minutes.

  3. 3

    Prepare the Vegetables

Chop the zucchini, bell pepper, and asparagus into bite-sized pieces. In a mixing bowl, toss the vegetables with olive oil, salt, and black pepper.

Grilling

  1. 4

    Preheat the Grill

Preheat your grill to medium-high heat (about 375°F to 400°F).

  2. 5

    Grill the Salmon

Remove the salmon from the marinade and place it skin-side down on the grill. Grill for 4-5 minutes on each side, or until the salmon flakes easily with a fork.

  3. 6

    Grill the Vegetables

While the salmon is grilling, place the vegetable mixture in a grilling basket or wrap it in aluminum foil. Grill for about 8-10 minutes, tossing occasionally, until tender.

  4. 7

    Serving

Once the salmon and vegetables are cooked, remove them from the grill. Serve the grilled salmon with the seasonal vegetables on the side.
