Preparing the Chips

    Cut the Potatoes

    Peel the potatoes and cut them into thick strips, about 1/2 inch wide.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch.

    First Fry

    In a large pot or deep fryer, heat vegetable oil to 325°F (160°C). Drain the soaked potatoes and pat them dry with a kitchen towel. Fry the potatoes in batches for 4-5 minutes until soft but not browned. Remove and drain on paper towels.

Preparing the Fish

    Make the Batter

    In a mixing bowl, combine all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold beer or sparkling water until the batter is smooth and thick.

    Heat the Oil

    In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

    Fry the Fish

    Dip the fish fillets into the batter, allowing the excess to drip off. Carefully place the battered fish into the hot oil and fry for about 5-7 minutes or until golden brown and crispy. Remove and drain on paper towels.

Finishing the Chips

    Increase the oil temperature to 375°F (190°C). Fry the partially cooked potatoes again in batches for 3-4 minutes until golden and crispy. Remove and drain on paper towels. Season with salt to taste.

Serving

    Plate the Dish

    Serve the fish and chips hot, garnished with lemon wedges, and accompanied by malt vinegar and tartar sauce on the side.
