Grains Preparation

Cook Quinoa
Rinse 1 cup of quinoa under cold water. In a medium pot, combine the rinsed quinoa with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until all water is absorbed. Remove from heat and let it sit for 5 minutes before fluffing with a fork.

Cook Brown Rice
In another pot, combine 1 cup of brown rice with 2.5 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 45 minutes or until the rice is tender and water is absorbed. Remove from heat and let it sit for 10 minutes before fluffing.

Cook Barley
In a separate pot, add 0.5 cups of barley with 2 cups of water and a pinch of salt. Bring to a boil, reduce heat to low, cover, and cook for about 30-40 minutes until tender. Drain any excess water if needed.

Prepare Vegetables
While the grains are cooking, wash and chop the vegetables. Halve the cherry tomatoes, dice the cucumber, chop the bell pepper, finely chop the red onion, and roughly chop the spinach. Combine all chopped vegetables in a large mixing bowl.

Make Dressing
In a small bowl, whisk together 3 tablespoons of olive oil, 2 tablespoons of lemon juice, 1 teaspoon of honey, and season with salt and black pepper to taste.
Combine and Serve

Assemble the Cheer Bowl
Once the grains are cooked and cooled slightly, add them to the bowl of chopped vegetables. Drizzle the dressing over the top and toss gently to combine all the ingredients evenly. Serve immediately or chill in the refrigerator for later.
