Preparation

  1. 1

    Prepare the Vegetables

Wash all the vegetables thoroughly. Dice the cucumber, halve the cherry tomatoes, chop the red bell pepper into small pieces, and finely chop the red onion. Place all the diced vegetables into a large mixing bowl.

  2. 2

    Chop the Herbs

Rinse the fresh basil and parsley under cold water. Pat them dry with a paper towel. Chop the herbs finely and add them to the bowl with the vegetables.

Dressing

    Make the Dressing

In a small bowl, combine the olive oil, lemon juice, honey, salt, and black pepper. Whisk together until well combined.

  2. 4

    Combine the Salad

Pour the dressing over the vegetable and herb mixture. Toss gently to ensure all ingredients are evenly coated with the dressing.

    Serve the Salad

Transfer the salad to a serving platter or individual bowls. Enjoy immediately as a light and fresh starter for sharing.
