    Prepare the zucchini

    Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease with cooking spray. Cut the zucchini into fry-like sticks, about 3 inches long and 1/2-inch thick.

    Set up breading stations

    Create three shallow bowls: one with flour mixed with salt and pepper, one with beaten eggs, and one with a mixture of coconut flakes, Parmesan cheese, and lemon zest.

    Coat the zucchini

    Dredge each zucchini stick in flour, then dip into the egg, and finally coat with the coconut-Parmesan mixture. Press gently to ensure the coating sticks.

    Bake the fries

    Place coated zucchini fries on the prepared baking sheet in a single layer. Spray lightly with olive oil or cooking spray. Bake for 20–25 minutes, flipping halfway through, until golden brown and crispy.

Creamy Parmesan Dipping Sauce

    Mix the sauce

    In a medium bowl, whisk together mayonnaise, sour cream, Parmesan cheese, lemon juice, garlic powder, sea salt, and black pepper until smooth and well combined.

    Refrigerate the sauce for at least 15 minutes before serving to allow the flavors to meld.

To Serve
