    Sauté Aromatics

    In a large soup pot or Dutch oven, heat 2 tablespoons of EVOO over medium heat. Add diced onion, carrot, and celery. Sauté for 5-6 minutes until vegetables are softened and aromatic.

    Cook Sausage

    Add the Italian sausage to the pot. Break it up with a wooden spoon and cook until browned and fully cooked through, about 6-8 minutes.

    Add Garlic and Seasoning

    Add the minced garlic, salt, black pepper, and red pepper flakes (if using). Stir and cook for 1 minute until fragrant.

    Add Broth and Beans

    Pour in the chicken or vegetable broth and add the cooked white beans. Bring the soup to a boil, then reduce heat to a simmer. Simmer uncovered for 15 minutes to allow flavors to meld.

    Add Kale

    Stir in the chopped Tuscan kale. Simmer for an additional 5-7 minutes, or until the kale is tender but still vibrant green.

    Adjust Seasoning

    Taste the soup and adjust seasoning with additional salt or pepper if needed.

    Serve and Garnish

    Ladle the soup into bowls. Drizzle each serving with a spoonful of pesto, sprinkle with grated Pecorino Romano cheese, and finish with a light drizzle of extra virgin olive oil.
