Boil pasta

Bring 4 liters of water to a boil in a large pot. Add 1 tablespoon of salt and cook the paccheri pasta according to package instructions until al dente, about 12–14 minutes.

Drain the pasta, reserving 1/2 cup of pasta water, and set aside.

Vodka Sauce

Sauté aromatics

In a large skillet or saucepan, heat olive oil and butter over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic and red pepper flakes and cook for another 30 seconds until fragrant.

Build the sauce

Stir in the tomato paste and cook for 2–3 minutes, stirring frequently, until the paste darkens in color.

Deglaze with vodka

Carefully pour in the vodka and stir to deglaze the pan, scraping up any browned bits. Let it simmer for 2–3 minutes to allow the alcohol to cook off.

Finish the sauce

Reduce the heat to low and stir in the heavy cream. Simmer for 3–4 minutes until the sauce is creamy and slightly thickened. Season with salt and black pepper.

Combine pasta and sauce

Add the cooked paccheri to the sauce. Toss gently to coat, adding reserved pasta water a little at a time if the sauce is too thick.

Add cheese and herbs

Stir in the grated Parmesan cheese and chopped basil. Cook for another minute until everything is well combined and heated through.
