    Prepare the sauce base

    In a medium saucepan, heat 2 tablespoons of extra virgin olive oil over medium heat. Add the finely chopped garlic and sauté for 1–2 minutes until fragrant but not browned.

    Cook the tomatoes

    Add the whole peeled San Marzano tomatoes to the pan. Use a spoon or potato masher to break the tomatoes into smaller pieces. Season with sea salt and freshly ground black pepper.

    Simmer the sauce

    Reduce the heat to low and let the sauce simmer for 20–25 minutes, stirring occasionally, until thickened and flavorful. Taste and adjust seasoning if needed.

Assembly & Garnish

    Assemble the dish

    Spoon the warm tomato sauce onto a serving platter or individual plates. Lay the fresh mozzarella slices evenly over the sauce.

    Add basil and finishing touches

    Scatter fresh basil leaves over the mozzarella. Drizzle with 1 tablespoon of extra virgin olive oil and sprinkle with sea salt to taste.

    Serve immediately while the tomato sauce is warm and the mozzarella is slightly softened. Enjoy as an appetizer or a light main course.
