    Activate Yeast

    In a small bowl, combine warm water, sugar, and yeast. Let it sit for 5–10 minutes until frothy.

    Mix Dough

    In a large mixing bowl, combine flour and salt. Add the yeast mixture and olive oil. Stir until it begins to form a dough.

    Knead Dough

    Transfer the dough to a floured surface and knead for 8–10 minutes until smooth and elastic.

    Let Dough Rise

    Place dough in a lightly oiled bowl, cover with a damp towel or plastic wrap, and let it rise in a warm place for 1–1.5 hours or until doubled in size.

Toppings and Assembly

    Preheat Oven

    Preheat your oven to 500°F (260°C) with a pizza stone or baking sheet inside.

    Prepare Base

    Punch down the risen dough and roll it out into a 12-inch circle on parchment paper.

    Add Garlic and Oil

    Brush the rolled-out dough with 2 tablespoons of EVOO and sprinkle the minced garlic evenly.

    Layer Toppings

    Distribute the mozzarella slices evenly over the dough. Add spicy soppressata slices, red onion, red chili flakes, and dried oregano on top.

    Bake Pizza

    Transfer the pizza (with parchment) to the preheated stone or baking sheet. Bake for 10–12 minutes, or until the crust is golden and cheese is bubbling.

    Finish with Basil

    Remove pizza from oven and immediately top with fresh basil leaves. Let rest for 2 minutes before slicing and serving.
