Method

Caramelized Onions

    Cook the onions

    In a skillet over medium heat, melt butter and add the sliced onions. Sprinkle with salt and cook, stirring occasionally, for 20–25 minutes until golden brown and caramelized.

    In the last 5 minutes of cooking, stir in the brown sugar to enhance the caramelization. Remove from heat and set aside.

Roasted Pears

    Prepare and roast pears

    Preheat oven to 400°F (200°C). Toss the sliced pears with olive oil, salt, and black pepper. Spread on a baking sheet in a single layer and roast for 15–18 minutes, flipping halfway through, until tender and lightly caramelized at the edges. Set aside.

Assemble and Bake Flatbread

    Preheat oven and prepare crust

    If using raw pizza dough, pre-bake at 450°F (230°C) for 5–7 minutes until lightly golden. If using flatbread, place it on a baking sheet.

    Add toppings

    Brush the crust with extra virgin olive oil. Evenly distribute minced garlic over the surface. Sprinkle chopped basil, then top with shredded mozzarella cheese.

    Layer on the caramelized onions, roasted pear slices, and crumbled gorgonzola cheese.

    Bake

    Bake in a preheated 450°F (230°C) oven for 8–10 minutes, or until the cheese is melted and bubbly and the crust is golden.

Finishing Touches

    Add arugula and balsamic

    Remove flatbread from the oven and immediately top with fresh arugula. Drizzle with balsamic glaze just before serving.
