Caramelizing the Onions

Prepare the onions
Peel and thinly slice the yellow onions into half-moons.

Cook the onions slowly, stirring every few minutes, for 25–30 minutes until they become golden brown and caramelized. Add a splash of water if they begin to stick or brown too quickly.

Stir in the fresh thyme leaves during the last 5 minutes of cooking. Remove from heat and set aside.
Preparing the Pears

Slice the pears
Wash and core the pears. Thinly slice them lengthwise into ⅛-inch slices. No need to peel unless desired.

If not serving immediately, lightly brush the pear slices with lemon juice to prevent browning.
Assembly & Serving

Warm the bread (if using)
Toast flatbread or baguette slices until golden and crisp. This can be done in the oven at 375°F (190°C) for 5–7 minutes.
