For the Marinara Sauce

Method

Make the Marinara Sauce

  1. 1

Heat the olive oil in a large saucepan over medium heat.

  2. 2

Add the chopped onion and sauté for 5-7 minutes, or until translucent and slightly golden.

  3. 3

Stir in the minced garlic and cook for 1 minute, until fragrant.

  4. 4

Add the crushed tomatoes and tomato paste to the pan. Stir to combine.

  5. 5

Season the sauce with oregano, basil, salt, pepper, and sugar (if using). Stir well.

  6. 6

Bring the sauce to a simmer, reduce the heat to low, and let it cook uncovered for 20-25 minutes, stirring occasionally.

  7. 7

Taste and adjust seasoning if necessary. Remove from heat and set aside until pasta is ready.

Cook the Pasta

  1. 8

Fill a large pot with water and bring it to a boil.

  2. 9

Add 1 tablespoon of salt to the water, then add the dried pasta.

  3. 10

Cook the pasta according to the package instructions until al dente (usually 8-10 minutes).

  4. 11

Reserve 1/2 cup of pasta water, then drain the pasta.

Combine and Serve

  1. 12

Return the drained pasta to the pot or a large serving bowl.

  2. 13

Pour the marinara sauce over the pasta and toss to combine. Add a splash of reserved pasta water if needed to loosen the sauce.

  3. 14

Serve hot, topped with chopped fresh basil and grated Parmesan cheese if desired.
