Pasta

Method

Pasta

  1. 1

    Boil the Pasta

Bring 4 quarts of water to a boil in a large pot. Add 1 tablespoon of salt, then add the fettuccine pasta. Cook according to package instructions until al dente (approximately 10–12 minutes). Reserve ½ cup of the pasta water, then drain the pasta and set aside.

Sauce

  1. 2

    Sauté Aromatics

In a large skillet over medium heat, add olive oil and butter. Once the butter is melted, add the minced garlic and chopped shallot. Sauté for 2–3 minutes until fragrant and translucent.

  2. 3

    Cook Tomatoes

Add the halved cherry tomatoes to the skillet and cook for 5–6 minutes, stirring occasionally, until they soften and begin to release their juices.

  3. 4

    Make Creamy Sauce

Reduce the heat to low. Pour in the heavy cream and stir well to combine. Let it simmer for 2–3 minutes. Stir in the grated Parmesan cheese until melted and smooth. Add chopped basil, salt, black pepper, and optional red pepper flakes. Mix well and taste for seasoning.

  4. 5

    Combine Pasta and Sauce

Add the cooked pasta to the skillet with the sauce. Toss to coat evenly. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached. Cook for an additional 2 minutes to allow the flavors to meld.

Garnish

  1. 6

    Plate and Garnish

Divide the pasta among serving plates. Top with shaved Parmesan and a few fresh basil leaves. Serve immediately.
