Olive Oil Cake

Prepare the oven and pan
Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.

Mix dry ingredients
In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

Mix wet ingredients
In a large bowl, beat the eggs and sugar together until pale and fluffy. Add the milk, olive oil, vanilla extract, and lemon zest. Mix until well combined.

Combine wet and dry
Gradually add the dry ingredients into the wet ingredients, stirring until just combined. Do not overmix.

Bake the cake
Pour the batter into the prepared cake pan and smooth the top. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Whip the mascarpone cream
In a medium bowl, combine the mascarpone, heavy cream, powdered sugar, and vanilla extract. Beat with a hand mixer on medium speed until soft peaks form. Refrigerate until ready to use.
Lemon Curd

Cook the lemon curd
In a small saucepan, whisk together the egg yolks, sugar, lemon juice, and lemon zest over medium-low heat. Cook, whisking constantly, until the mixture thickens and coats the back of a spoon, about 6–8 minutes.

Candied Lemon Peel

Candy the lemon peel
In a small saucepan, combine the water and sugar over medium heat and stir until the sugar is dissolved. Add the lemon peel strips and simmer for 10–15 minutes, until translucent. Remove the peels with a slotted spoon and place on a parchment-lined tray to cool.
Assembly and Garnish

Assemble the dessert
Once the cake is completely cooled, spread a layer of mascarpone cream on top. Add dollops or swirls of lemon curd over the cream. Garnish with candied lemon peel and fresh mint leaves before serving.
