Bolognese Sauce

    Sauté vegetables

    In a large saucepan or Dutch oven, heat olive oil over medium heat. Add chopped onion, carrot, and celery. Cook for 5–7 minutes until vegetables are soft and translucent.

    Add garlic and meat

    Add minced garlic and cook for 1 minute. Add ground beef and pork, breaking up the meat with a spoon. Cook until browned, about 8–10 minutes.

    Incorporate tomato paste and deglaze

    Stir in tomato paste and cook for 2 minutes. Pour in red wine and let it reduce for 2–3 minutes, scraping the bottom of the pan.

    Add tomatoes and seasonings

    Add crushed tomatoes, milk, bay leaf, salt, and pepper. Bring to a simmer.

    Simmer sauce

    Reduce heat to low, cover partially, and simmer for 45 minutes, stirring occasionally. Remove bay leaf before using.

Béchamel Sauce

    Make roux

    In a medium saucepan, melt butter over medium heat. Add flour and whisk constantly for 2 minutes to form a roux.

    Whisk in milk

    Gradually whisk in milk, ensuring no lumps remain. Bring to a gentle simmer.

    Season and thicken

    Add salt and nutmeg. Cook, whisking often, for 5–7 minutes until thickened to the consistency of heavy cream. Remove from heat.

Lasagna Assembly

    Preheat oven and prepare pan

    Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with olive oil.

    Layer ingredients

    Spread a thin layer of Bolognese sauce on the bottom of the dish. Layer 3 lasagna noodles over the sauce. Spread 1/4 of the Bolognese sauce, 1/4 of the béchamel sauce, and sprinkle some mozzarella. Repeat layers 3 more times, ending with béchamel and a generous sprinkle of Parmesan on top.

    Bake lasagna

    Cover with foil and bake for 25 minutes. Remove foil and bake for another 20 minutes until golden and bubbling.

    Rest before serving

    Let the lasagna rest for 15 minutes before slicing and serving to allow it to set.
