    Prepare the dough

    In a small bowl, combine warm water, sugar, and yeast. Let sit for 5–10 minutes until foamy.

    In a large bowl, combine flour and salt. Add foamy yeast mixture and olive oil. Mix until a dough forms.

    Knead the dough on a lightly floured surface for about 8–10 minutes, until smooth and elastic.

    Place dough in a lightly oiled bowl, cover with a damp cloth, and let rise in a warm place for 1 hour, or until doubled in size.

Tomato Sauce

    Make the sauce

    Heat olive oil in a saucepan over medium heat. Add minced garlic and cook for 1 minute until fragrant.

    Add crushed tomatoes, salt, oregano, and chopped basil. Simmer for 15–20 minutes, stirring occasionally, until slightly thickened.

    Remove from heat and set aside to cool slightly before using on the pizza.

Toppings

    Prepare toppings

    Clean and slice mushrooms. Cook Italian sausage in a skillet over medium heat until browned and crumbled. Drain excess fat. Set both aside.

    Preheat oven to 475°F (245°C). Place a pizza stone or inverted baking sheet in oven to heat.

    Punch down the risen dough and roll it out on a floured surface to a 12–14 inch circle. Transfer to a sheet of parchment paper.

    Spread about 3/4 cup of tomato sauce evenly over the crust, leaving a 1-inch border.

    Sprinkle shredded mozzarella evenly over the sauce. Top with sliced mushrooms, pepperoni slices, and cooked sausage.

    Sprinkle dried oregano and fresh basil over the toppings.

    Carefully transfer the pizza (with parchment) to the preheated pizza stone or baking sheet. Bake for 12–15 minutes, or until crust is golden and cheese is bubbly and browned.

    Remove pizza from oven, let cool for 5 minutes, then slice and serve.
