Method

Flourless Chocolate Cake

    Preheat and Prepare Pan

    Preheat the oven to 175°C (350°F). Grease a 9-inch round springform pan and line the bottom with parchment paper.

    Melt Chocolate and Butter

    In a heatproof bowl set over a saucepan of simmering water (double boiler), melt the bittersweet chocolate and unsalted butter together, stirring occasionally until smooth. Remove from heat and let cool slightly.

    Mix Wet Ingredients

    In a large bowl, whisk together the granulated sugar, eggs, vanilla extract, and salt until fully combined and slightly thickened.

    Combine Ingredients

    Slowly whisk the melted chocolate mixture into the egg mixture until smooth. Fold in the hazelnut meal until just combined.

    Bake

    Pour the batter into the prepared pan and smooth the top. Bake for 25–30 minutes, or until the center is just set and the edges start to pull away from the sides. A toothpick inserted in the center should come out with a few moist crumbs.

    Cool

    Let the cake cool in the pan for 10 minutes, then remove the sides of the springform pan and allow the cake to cool completely on a wire rack.

Whipped Mascarpone

    Mix Ingredients

    In a mixing bowl, combine mascarpone cheese, heavy cream, powdered sugar, and vanilla extract.

    Whip

    Using a hand mixer or stand mixer fitted with the whisk attachment, beat on medium-high speed until soft peaks form and the mixture is light and fluffy. Be careful not to over-whip as mascarpone can become grainy.

    Chill

    Refrigerate until ready to use.

Chocolate Sauce

    Heat Cream

    In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.

    Add Chocolate and Butter

    Remove from heat and add the chopped chocolate and butter. Let sit for 1 minute, then stir until smooth and glossy.

    Add Vanilla

    Stir in the vanilla extract. Set aside and keep warm.

Assembly

    Serve

    Slice the cooled flourless chocolate cake and serve with a generous dollop of whipped mascarpone and a drizzle of warm chocolate sauce. Optionally garnish with chopped toasted hazelnuts or a dusting of cocoa powder.
