Method
Cake Batter
- 1
Prepare oven and pans
Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans or line them with parchment paper.
- 2
Mix dry ingredients
In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
- 3
- 4
Add boiling water
Slowly stir in the boiling water. The batter will be thin, but this is normal. Fold in the chopped toasted hazelnuts.
- 5
Bake the cakes
Divide the batter evenly between the prepared cake pans. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
- 6
Cool the cakes
Let the cakes cool in the pans for 10 minutes, then remove from pans and transfer to a wire rack to cool completely.
Chocolate Hazelnut Frosting
- 7
Cream butter and hazelnut spread
In a large bowl, beat the softened butter and chocolate hazelnut spread with an electric mixer on medium speed until light and fluffy, about 2–3 minutes.
- 8
Add sugar and cream
Gradually add the powdered sugar, beating on low speed. Add the heavy cream, vanilla extract, and a pinch of salt. Beat on high speed for 3–4 minutes until the frosting is fluffy and spreadable.
Assembly and Decoration
- 9
Frost the cake
Place one cake layer on a serving plate. Spread a generous amount of frosting on top. Place the second layer on top and frost the top and sides of the cake evenly.
- 10
Decorate
Sprinkle the top and sides of the cake with chopped toasted hazelnuts and optional chocolate shavings for an elegant finish.
- 11
Serve
Let the cake sit for 15–20 minutes before serving to allow the frosting to set. Slice and enjoy!
