    Prepare Chicken

    Pound the chicken breasts to an even ½-inch thickness. Season both sides with salt and pepper.

    Dredging Station

    Set up three shallow bowls: one with flour, one with beaten eggs mixed with milk, and one with breadcrumbs mixed with Parmesan, oregano, and garlic powder.

    Bread Chicken

    Dredge each chicken breast in flour, then dip in the egg mixture, then coat evenly with the breadcrumb mixture. Press gently to adhere.

    Cook Chicken

    Heat olive oil in a large skillet over medium heat. Add breaded chicken and cook 4–5 minutes per side, until golden brown and cooked through. Transfer to a plate and keep warm.

Tomato Sauce

    Sauté Garlic

    In a small saucepan, heat olive oil over medium heat. Add minced garlic and sauté for 30-60 seconds until fragrant.

    Simmer Sauce

    Add crushed tomatoes, salt, pepper, dried basil, and sugar. Stir to combine and simmer for 10–15 minutes, stirring occasionally. Adjust seasoning to taste.

Sandwich Assembly

    Toast Bread

    Slice ciabatta rolls in half and toast them cut-side down in a skillet with a little butter until golden and crisp (optional).

    Assemble Sandwich

    Place a cooked chicken breast on the bottom half of each ciabatta roll. Spoon tomato sauce over the chicken, top with slices of mozzarella, and place under the broiler for 1–2 minutes until cheese is melted and bubbly.

    Top with fresh basil leaves and close the sandwich with the top half of the roll. Serve immediately.
