Chicken Fingers

    Prepare the Chicken

    Slice the chicken breasts into 1-inch wide strips, about 3–4 inches long. Pat dry with paper towels.

    Set Up Breading Stations

    Place the flour in one shallow bowl. In another bowl, whisk the eggs with milk until combined. In a third bowl, mix panko breadcrumbs with garlic powder, paprika, salt, and pepper.

    Bread the Chicken

    Dredge each chicken strip in flour, shaking off excess. Dip into the egg mixture, then press into the breadcrumb mixture to coat evenly. Set aside on a plate.

    Fry the Chicken

    Heat 2 cups of vegetable oil in a deep skillet or frying pan over medium-high heat (350°F/175°C). Fry chicken strips in batches, 3–4 minutes per side, until golden brown and internal temperature reaches 165°F. Drain on paper towels.

French Fries

    Prepare the Potatoes

    Peel the potatoes and cut into 1/4-inch thick fries. Soak in cold water for at least 30 minutes, then drain and pat dry thoroughly with paper towels.

    Fry the Fries - First Fry

    Heat vegetable oil in a deep fryer or large pot to 325°F (160°C). Fry potatoes in batches for 3–4 minutes until just tender but not browned. Remove and drain on paper towels.

    Fry the Fries - Second Fry

    Increase oil temperature to 375°F (190°C). Re-fry the potatoes in batches until golden brown and crispy, about 2–3 minutes. Drain and season immediately with salt.

Optional Dipping Sauce

    In a small bowl, mix ketchup, mayonnaise, and hot sauce (if using) until blended. Serve alongside chicken fingers and fries.
