    Activate the yeast

    In a small bowl, combine the warm water, sugar, and yeast. Let it sit for 5–10 minutes until foamy.

    Make the dough

    In a large mixing bowl, combine the flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms.

    Knead the dough

    Transfer the dough to a floured surface and knead for about 8–10 minutes until smooth and elastic.

    Let the dough rise

    Place the dough in a lightly oiled bowl, cover with plastic wrap or a damp towel, and let it rise in a warm place for 1–1.5 hours, or until doubled in size.

    Prepare the sauce

    In a small saucepan over medium heat, add olive oil and sauté the minced garlic for 1 minute until fragrant.

    Simmer the sauce

    Add the crushed tomatoes, oregano, salt, and sugar. Stir well and simmer for 15 minutes, stirring occasionally. Remove from heat and set aside.

Assembly and Baking

    Preheat the oven

    Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to preheat as well.

    Shape the dough

    Punch down the risen dough and roll it out on a floured surface into a 12–14 inch circle. Transfer to a pizza peel or baking sheet lined with parchment paper.

    Add the sauce and cheese

    Spread an even layer of the tomato sauce over the dough, leaving a small border around the edges. Sprinkle the mozzarella cheese evenly over the sauce, followed by the Parmesan cheese.

    Lightly brush the exposed crust with olive oil and sprinkle with dried oregano if desired.

    Bake for 12–15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
