Butter Cake

Preheat Oven
Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan. Line the bottom with parchment paper for easy removal.

Prepare Butter Mixture
In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed until light and fluffy, about 3-4 minutes.

Add Eggs and Vanilla
Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.

Combine Dry Ingredients
In a separate bowl, whisk together the flour, baking powder, and salt.

Bake the Cake
Pour the batter into the prepared cake pan and smooth the top. Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.

Cool the Cake
Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Optionally, warm slightly before serving.

Prepare Berries
In a medium bowl, combine the strawberries, blueberries, and raspberries.

Macereate Berries
Sprinkle the berries with sugar and lemon juice. Gently toss to coat. Let sit for 10–15 minutes at room temperature to allow juices to develop.
Serving

Assemble Dessert
Cut the butter cake into slices or wedges. Place one slice on a dessert plate.

Add Toppings
Top the cake slice with a generous spoonful of the macerated berries, allowing some of the juices to drizzle over the cake.

Add Gelato
Place a scoop of vanilla bean gelato next to or on top of the cake.

Garnish
Optionally, dust with powdered sugar and garnish with a mint leaf. Serve immediately.
