Preparation

    Prepare the Fries

    Peel and cut the potatoes into fries. Rinse them in cold water and soak for about 30 minutes. Drain and pat dry.

    Fry the Potatoes

    In a large pot or deep fryer, heat oil to 350°F (175°C). Fry the potato strips in batches until they are golden brown and crispy. Remove and drain on paper towels. Season with salt.

    Assemble the Sandwich

    Spread 1 tablespoon of dressing on one side of each slice of rye bread. Layer corned beef, Swiss cheese, and sauerkraut on two slices, then top with the other two slices of bread, dressing side down.

    Grill the Sandwich

    Heat a skillet over medium heat, melt 1 tablespoon of butter, and place the sandwiches in the skillet. Grill until golden brown, about 4-5 minutes per side. Add more butter as needed.

    Serve

    Cut the sandwiches in half and serve with fries and ketchup on the side.
