Espresso

    Prepare and pull espresso

    Preheat your espresso machine by running a blank shot (no coffee) for 5–10 seconds to warm the group head and portafilter. Weigh 18 g of freshly ground espresso and distribute it evenly in the portafilter; tamp firmly and level. Lock the portafilter into the machine and start extraction. Aim for a 25–30 second extraction yielding about 60 ml of espresso (a standard double). If using a manual espresso maker, follow its recommended dosing and extraction times to achieve a rich crema.

    Pour the espresso into a pre-warmed 150–180 ml cappuccino cup immediately when extraction finishes to preserve crema and heat.

Steamed Milk & Foam

    Prepare milk

    Measure 150 ml of cold whole milk and pour into a chilled milk pitcher. Whole milk gives the best texture for microfoam; for alternatives, use barista-style plant milk and adjust technique slightly.

    Purge steam wand

    Wipe and purge the steam wand briefly (1–2 seconds) to remove condensation and ensure dry steam.

    Steam the milk

    Submerge the steam wand tip just below the milk surface and turn on the steam. Introduce a small amount of air for 2–4 seconds by keeping the tip near the surface (you should hear a gentle hissing). Then submerge the wand slightly deeper to create a vortex and heat milk to about 60–65°C (140–150°F). Total steaming time ~20–40 seconds depending on equipment. Aim for silky, glossy microfoam with fine bubbles and about 1–1.5 cm of foam for a classic cappuccino.

    Texture and settle

    Turn off the steam, wipe the wand, and purge briefly. Tap the pitcher gently on the counter and swirl to remove any large bubbles and to integrate foam into the milk (you want velvety microfoam).

    Pour milk

    Hold the cup with espresso at a slight angle. Start pouring from about 5–6 cm above the cup to allow milk to sink beneath the crema, then lower the pitcher and pour more quickly to bring foam to the surface. Aim for roughly equal parts espresso, steamed milk, and foam (about 60 ml espresso, ~60 ml liquid milk, ~30 ml foam) to create the classic 1:1:1 cappuccino structure. Stop pouring when cup is nearly full and finish with 1–1.5 cm of foam on top.

Finishing

    If desired, dust the foam lightly with cocoa powder or ground cinnamon (about 1 tsp) for garnish.

    Taste and add up to 1 tsp sugar or sweetener if desired; stir gently without breaking too much foam.

    Serve immediately while hot. Cappuccino is best enjoyed within a few minutes to appreciate the texture contrast between espresso and foam.
