    Make simple syrup

    Combine 200 g granulated sugar and 200 ml water in a small saucepan. Warm over medium heat, stirring occasionally, until the sugar is completely dissolved and the liquid is clear (about 3–5 minutes). Do not boil. Remove from heat and let cool to room temperature.

    Once cooled, transfer the simple syrup to a clean container and refrigerate until cold (about 15–30 minutes) if not using immediately.

    Chill 1 liter of carbonated water thoroughly. Keep it cold and unopened until just before mixing to preserve carbonation.

Citrus & Flavoring

    Prepare citrus

    Zest one lime and one lemon to yield about 1 tsp each. Juice fresh limes and lemons to get 4 tbsp (about 60 ml) of each juice. Strain juices through a fine sieve to remove pulp and seeds.

    In a measuring cup or small pitcher, combine the cooled simple syrup with the strained lime juice, lemon juice, lime zest, and lemon zest. Stir to combine.

    Stir in citric acid (about 1 tsp) if you want a sharper, more soda-like tartness. If you have a natural lemon-lime extract, add 1 tsp to intensify the commercial soda flavor. Taste and adjust: add up to 1 tsp more simple syrup if you prefer sweeter, or another 1/2 tsp citric acid for more tang.

Finish & Serve

    Place 2 cups of ice into a large pitcher or divide among 4 tall glasses.

    Pour the citrus-syrup mixture over the ice (this concentrated mixer is about 180–220 ml total).

    Slowly pour 1 liter of chilled carbonated water over the citrus-syrup mixture, stirring gently once or twice with a long spoon to combine. Pour gently to preserve carbonation and avoid vigorous stirring.

    Taste and adjust: if too tart, add a tablespoon of cold simple syrup; if too sweet, add a splash more carbonated water or a pinch of citric acid.

    Garnish each glass with lime and lemon wheels and serve immediately while fizzy.
