Chai Spice Blend

Method

Prepare Chai Spice Blend

  1. 1

    Mix spices

In a small bowl, combine 1 tsp ground cinnamon, 1 tsp ground cardamom, 1 tsp ground ginger, 1 tsp ground cloves, and 1/4 tsp ground black pepper. Stir until evenly blended. Set aside. This is the concentrated chai spice blend used to flavor the tea.

Brew Tea

  1. 2

    Simmer spices and water

In a small saucepan, add 1 cup water and half of the prepared chai spice blend (about 1.5 tsp). Bring to a gentle simmer over medium heat for 2 minutes, stirring once so spices bloom and release aroma.

  2. 3

    Steep tea

Add 1 black tea bag (or 1 tablespoon loose black tea in an infuser) to the simmering spiced water. Remove from heat and let steep, covered, for 3–4 minutes for robust flavor. Taste after 3 minutes and steep up to 4 minutes if you prefer stronger tea. Remove and discard tea bag or strain out leaves.

Finish Latte

  1. 4

    Sweeten

Return the spiced brewed tea to low heat. Add 2 tablespoons brown sugar (or preferred sweetener) and 1/4 tsp vanilla extract. Stir until the sugar dissolves, about 30–45 seconds. Do not boil.

  2. 5

    Heat and froth milk

In a separate small saucepan or with a milk steamer, warm 1 cup milk over medium-low heat until hot but not boiling (steaming and small bubbles around edges), about 3–4 minutes. If you want foam, froth the milk with a handheld frother for 20–30 seconds or vigorously whisk for 30–45 seconds until frothy.

  3. 6

    Combine and serve

Pour the sweetened spiced tea into a large mug (about 12 oz). Slowly add the warmed milk, holding back foam with a spoon, then spoon foam on top. Stir gently to integrate. Taste and adjust sweetness if needed.

  4. 7

    Garnish (optional)

Dust the top with a light pinch (about 1/8 tsp) ground cinnamon and add a cinnamon stick for stirring and presentation.
