Prepare the Sauce
In a bowl, whisk together soy sauce, rice vinegar, hoisin sauce, cornstarch, and water until smooth.

Cook the Chicken
In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat. Add the diced chicken and stir-fry until cooked through, about 5-7 minutes. Remove from skillet and set aside.

Stir-fry Vegetables
In the same skillet, add another tablespoon of oil. Stir-fry the garlic, ginger, bell pepper, zucchini, and dried red chilies for about 3-4 minutes until vegetables are tender-crisp.

Combine Ingredients
Return the chicken to the skillet, add the prepared sauce, and toss everything together. Cook for an additional 2-3 minutes until the sauce thickens and evenly coats the chicken and vegetables.

Add Peanuts and Serve
Stir in the roasted peanuts and chopped green onions. Mix well and serve hot over rice or noodles.
