    Marinate the Duck

    In a bowl, combine lime juice, soy sauce, minced garlic, thyme, grated ginger, and honey. Add duck breasts and marinate for at least 1 hour in the refrigerator.

    Prepare Roasted Potatoes

    Preheat the oven to 400°F (200°C). Toss Gather Urban Farm Herbed Potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes or until golden brown.

    Cook the Duck

    Heat a skillet over medium-high heat. Remove duck from marinade and sear in the skillet, skin side down, for about 6-8 minutes until the skin is crispy. Flip and cook for another 4-6 minutes until desired doneness. Let rest before slicing.

    Make Red Pepper Sauce

    In the same skillet, add chopped red bell pepper and sauté until softened. Blend until smooth to create a sauce.

    Fry Plantains

    In a separate pan, heat oil over medium heat. Fry sliced plantains for about 2-3 minutes on each side or until golden brown. Drain on paper towels.

    Plating

    Slice the duck and serve over roasted potatoes, drizzled with red pepper sauce. Add fried plantains on the side and garnish with Gather Urban Farm Micros.
