Prepare the Filling

In a mixing bowl, combine shredded chicken, softened cream cheese, Monterey Jack cheese, chopped green onions, and diced jalapeños. Mix well until all ingredients are combined.

Prepare Tortilla Chips

Spread tortilla chips on a baking sheet and preheat the oven to 350°F (175°C).

Bake the Mixture

Spoon the chicken mixture over the tortilla chips and bake in the preheated oven for 15-20 minutes until the cheese is melted and bubbly.

Poco Shredded Beef Chimis

Prepare the Filling

In a bowl, mix shredded beef with chopped cilantro.

Assemble Chimis

Place a spoonful of beef mixture on each flour tortilla and sprinkle with cheddar cheese. Roll tightly.

Fry the Chimis

Heat vegetable oil in a frying pan over medium heat. Fry chimis until golden brown, about 3-4 minutes on each side. Drain on paper towels.

Mini Chicken Flautas

In a bowl, mix shredded chicken with cumin and paprika.

Take a corn tortilla, place a spoonful of chicken mixture, and roll tightly. Secure with a toothpick if needed.

Heat vegetable oil in a frying pan. Fry flautas until golden brown and crispy, about 3-4 minutes on each side. Drain on paper towels.

Assemble Tacos

Fill each corn taco shell with shredded beef, followed by shredded lettuce and diced tomato.
