Salad Preparation
1. Prepare the Greens
In a large bowl, add the chopped Romaine Lettuce and Spinach. Rinse under cold water and spin dry in a salad spinner or gently pat dry with paper towels.
2. Chop the Veggies
Halve the Cherry Tomatoes and set aside. Peel the Cucumber, cut it in half lengthwise, and slice into half-moons. Finely slice the Red Onion and set aside. Peel and shred the Carrots if using whole carrots, or use pre-shredded carrots.
3. Add Bell Pepper
Core the Bell Pepper, remove the seeds, and cut into thin strips or cubes. Add to the salad bowl.
4. Combine Ingredients
Add the chopped Cherry Tomatoes, Cucumber, Red Onion, Carrots, Bell Pepper, Feta Cheese, and Olives to the bowl with the greens. Toss gently to combine all ingredients.
Serving
5. Dress the Salad
Serve the salad in a large serving bowl or on individual plates. Provide two sides of dressing: Italian Dressing and Ranch Dressing.
