Filling Preparation
1. Prepare the Filling
In a large mixing bowl, combine the shredded chicken, cream cheese, diced jalapeños, shredded cheddar cheese, cumin, garlic powder, salt, and pepper. Mix well until all ingredients are thoroughly combined.
Assembly
2. Assemble the Mini Chimis
Take a flour tortilla and place about 2 tablespoons of the filling in the center. Fold in the sides and roll it up tightly to form a chimichanga. Repeat this process until all tortillas and filling are used.
Frying
3. Fry the Mini Chimis
In a large skillet, heat the oil over medium heat. Once the oil is hot, carefully add the rolled mini chimis, a few at a time, and fry until golden brown and crispy, about 3-4 minutes per side. Remove from the skillet and place on paper towels to drain excess oil.

4. Make the Sauce
