Method

Mini Tacos

Prepare the Beef

Add taco seasoning and a little water according to package instructions. Simmer for 5 minutes.

Assemble the Tacos

In each mini taco shell, place a spoonful of the seasoned beef, followed by shredded lettuce, diced tomatoes, and shredded cheese. Top with a dollop of sour cream.

Mini Chimis

Prepare the Filling

In a bowl, mix the shredded chicken with cream cheese until well combined.

Assemble the Chimis

Place a tablespoon of the chicken mixture in the center of each mini tortilla. Roll tightly and secure with a toothpick if necessary.

Fry the Chimis

Heat oil in a frying pan over medium-high heat. Fry the chimis until golden brown on all sides, about 2-3 minutes. Remove and drain on paper towels.

Mini Flautas

Prepare the Filling

In a bowl, mix the shredded beef with seasonings of your choice if desired.

Assemble the Flautas

Place a tablespoon of the beef mixture in the center of each mini corn tortilla. Roll tightly and secure with a toothpick if necessary.

Fry the Flautas

Heat oil in a frying pan over medium-high heat. Fry the flautas until crispy and golden, about 3-4 minutes. Remove and drain on paper towels.

Prepare the Guacamole

In a bowl, mash the avocados. Add lime juice and salt, mixing until smooth.

Prepare the Jalapeño Cream Cheese

If using plain cream cheese, mix in diced jalapeños to taste.
