Tamale Dough Preparation

1. Prepare the Corn Husks

Soak the corn husks in warm water for about 30 minutes to soften them, then drain and set aside.

2. Make the Dough

In a large mixing bowl, whisk together masa harina, baking powder, and salt. Add vegetable shortening and mix with your hands until crumbly. Gradually add the broth, mixing until a soft dough forms.

Beef Filling Preparation

3. Cook the Beef

In a large skillet over medium heat, add ground beef and cook until browned. Drain excess fat.

4. Add Vegetables and Spices

Add chopped onion and minced garlic to the skillet with the beef, cooking until the onion is translucent. Stir in red chili powder, cumin, salt, black pepper, and water. Simmer for 10 minutes, then remove from heat.

Tamale Assembly

5. Assemble the Tamales

Take a soaked corn husk and spread about 1/4 cup of tamale dough in the center. Add 2 tablespoons of beef filling on top of the dough. Fold the sides of the husk over the filling and then fold the bottom up to secure the tamale.

6. Steam the Tamales

Place the tamales upright in a steamer pot. Cover with a damp cloth and steam for about 1 to 1.5 hours, checking occasionally to ensure they don't dry out.
