Prepare Fruit & Mint

Cube watermelon
Cut seedless watermelon into 1/2-inch cubes until you have about 4 cups. Reserve 1 cup of cubes for serving if you want chunkier sangria; place the rest in a large pitcher.

Muddle mint
Lightly bruise half of the mint (about 1/2 cup) by clapping between your hands or gently muddling in a mortar. Add bruised mint to the pitcher with the cubed watermelon to release aroma without turning bitter.

Add lime slices
Add the thinly sliced lime wheels to the pitcher to infuse bright citrus notes.
Mix Sangria

Pour 1 cup watermelon vodka and 3 cups rosé into the pitcher over the watermelon, mint, and lime.

Add 1 cup fresh lime juice and 1/2 cup simple syrup (taste and adjust; add more if you prefer sweeter). Stir gently to combine so the syrup dissolves and the fruit is evenly distributed.

Taste and adjust: if the sangria feels too strong, add up to 1/2 cup additional rosé or 1/4–1/2 cup cold water. If it needs more brightness, add another tablespoon of lime juice.
Chill & Finish

Cover the pitcher and refrigerate for at least 1 hour, preferably 2–4 hours, to allow flavors to meld. For quickest service, chill 30 minutes and add ice when serving.

Just before serving, lightly bruise the remaining mint leaves (the other 1/2 cup) and add to the pitcher along with the reserved 1 cup watermelon cubes.

If you prefer a lightly sparkling sangria, pour in 1 cup chilled club soda or sparkling water and gently stir. Do this just before serving to preserve effervescence.
