Slow-Roasted Buffalo Chicken

    Prepare sauce and chicken

    Preheat oven to 275°F (135°C). In a small saucepan over low heat, combine buffalo wing sauce, butter, apple cider vinegar, garlic powder, onion powder, smoked paprika, ½ teaspoon kosher salt and ½ teaspoon black pepper. Warm until butter melts and sauce is homogenous, about 3–5 minutes. Taste and adjust seasoning.

    Season and arrange chicken

    Pat chicken dry with paper towels. Season both sides with the remaining ½ teaspoon kosher salt and ½ teaspoon black pepper. Place chicken in a shallow roasting dish or oven-safe pan in a single layer. Pour most of the warmed buffalo sauce over the chicken, reserving about 2–3 tablespoons for later use. Turn chicken to coat lightly.

    Slow roast

    Cover the dish tightly with foil and place in the preheated oven. Slow roast until the chicken is very tender and easily shreds with two forks, 90–120 minutes depending on thickness (start checking at 75–90 minutes). Internal temperature should reach 165°F (74°C).

    Shred and toss

    Remove chicken from the oven and let rest, covered, 5 minutes. Transfer chicken to a large bowl and shred with two forks. Add the reserved buffalo sauce and toss to coat evenly. If mixture seems wet, spoon out a small amount of liquid; if dry, add up to 2 tablespoons more sauce.

    Crisp the shredded chicken

    In a large nonstick or cast-iron skillet, heat 2 tablespoons neutral oil over medium-high heat until shimmering. Sprinkle the shredded chicken with 1 tablespoon cornstarch and toss to coat evenly (this helps create a light crisp). Add the chicken to the hot skillet in an even layer and press down gently. Let cook, undisturbed, 2–3 minutes until the bottom is browned and slightly crisp. Stir or flip and cook another 1–2 minutes to crisp additional edges. Remove from heat.

    Assemble

    Transfer crispy buffalo chicken to a serving platter or keep in the skillet for family-style serving. Immediately sprinkle the shredded cheese evenly over the hot chicken so it melts. Scatter sliced jalapeños and sliced green onions on top.

    Serve hot with ranch or blue cheese dressing for dipping or drizzling and lime wedges on the side. Recommended serving options: over rice, tucked into tacos or sliders, or atop a baked potato or nachos.
