    Activate yeast

    In a small bowl, combine warm water, sugar and active dry yeast. Stir gently and let sit 5–10 minutes until foamy.

    Mix dough

    In a large bowl or stand mixer fitted with a dough hook, combine flour and salt. Add the yeast mixture and olive oil. Mix until a rough dough forms, about 2–3 minutes (or 5 minutes on medium speed).

    Knead

    Knead by hand on a lightly floured surface or with the mixer for 6–8 minutes until dough is smooth and elastic.

    First rise

    Place dough in a lightly oiled bowl, cover with plastic wrap or a damp towel, and let rise in a warm place for 1 to 1.5 hours, or until doubled in size.

    Shape

    Punch down the dough, transfer to a lightly floured surface, and shape into a 14" disk. Let rest 10 minutes while preparing sauce and toppings.

    Make sauce

    In a small saucepan over medium heat, warm 1 tsp olive oil. Add minced garlic and sauté 20–30 seconds until fragrant. Stir in crushed tomatoes and tomato paste, then add oregano, basil, salt, pepper and sugar. Simmer gently for 10–12 minutes, stirring occasionally. Remove from heat and cool slightly.

    Prepare vegetables

    While sauce simmers, slice peppers, onion, mushrooms and olives into thin, even pieces so they cook quickly on the pizza.

    Assemble cheese blend

    In a bowl combine shredded mozzarella, provolone and grated Parmesan. Reserve the optional sliced/fresh mozzarella to dot the top if desired.

    Prep meats

    If your sausage, ham or bacon are not already cooked, cook them now: brown crumbled sausage and diced ham in a skillet until cooked through; cook bacon until crisp and crumble. Drain on paper towels.

Assembly & Bake

    Preheat oven

    Place a pizza stone or inverted baking sheet on the middle rack and preheat oven to 500°F (260°C) for at least 30 minutes. If using a home oven that doesn’t reach 500°F, preheat to highest temperature (475–500°F).

    Stretch dough

    On a piece of parchment or a well-floured pizza peel, stretch the dough to a 14" round, leaving a slightly thicker edge for the crust. Press out any large bubbles.

    Sauce and cheese

    Spread about 3/4 to 1 cup of the prepared tomato sauce evenly over the dough, leaving a 1/2"–3/4" border. Sprinkle the mixed shredded cheeses evenly over the sauce. If using fresh/sliced mozzarella, place slices sparingly on top.

    Add toppings

    Distribute pepperoni, cooked sausage, ham and bacon evenly over the cheese. Scatter peppers, onions, mushrooms and olives on top so every slice gets a bit of each topping. Do not overload; aim for an even single layer for best cooking.

    Brush crust

    Brush the exposed crust with 1 tablespoon olive oil and sprinkle with 1/2 tsp dried oregano and a pinch of salt.

    Bake

    Slide the pizza (on the parchment) onto the preheated stone or inverted baking sheet. Bake for 8–12 minutes at 500°F (or 10–14 minutes at 475°F) until crust is golden and cheese is bubbling and starting to brown in spots.

    Finish

    Remove pizza from oven and let rest 2–3 minutes. Sprinkle with grated Parmesan if desired and a light dusting of crushed red pepper flakes to taste. Slice and serve hot.
