Salad Base

Prepare Salad Base

    Wash and dry greens

    Rinse the mixed salad greens thoroughly under cold water. Spin or pat dry with paper towels until mostly dry; excess water will dilute the dressing.

    Halve the cherry tomatoes, peel (if desired) and thinly slice the cucumber, very thinly slice the red onion, and peel and julienne or shred the carrot. Place all prepared vegetables in a large salad bowl with the greens.

Make Vinaigrette

    In a small bowl or jar, combine the red wine vinegar, Dijon mustard, honey (or maple syrup), lemon juice and minced garlic. Whisk briefly to blend.

    Slowly stream in the extra-virgin olive oil while whisking (or add oil to jar then shake vigorously) until the dressing emulsifies. Season with kosher salt and freshly ground black pepper; taste and adjust acidity or sweetness if needed.

Assemble and Serve

    Just before serving, pour the vinaigrette over the salad—start with about half and gently toss to coat. Add more dressing as needed to lightly dress the leaves; avoid drowning the salad.

    Sprinkle the crumbled feta (if using), toasted seeds or nuts, and the chopped fresh herbs over the dressed salad. Give one gentle toss to distribute toppings.

    Divide the salad into 2 to 4 side portions and serve immediately.
