    Set up three shallow bowls or rimmed plates: Bowl 1 (dry 1) — combine all-purpose flour and cornstarch; Bowl 2 (wet) — whisk together the eggs, milk (or buttermilk) and hot sauce until smooth; Bowl 3 (dry 2) — combine breadcrumbs, grated parmesan (if using), garlic powder, onion powder, smoked paprika, black pepper, and salt.

    For a thicker, crunchier crust: first dredge each chilled pickle stick in the flour mixture, shaking off excess; then dip into the egg mixture, letting excess drip back into the bowl; finally press into the breadcrumb mixture, coating all sides. For Frying

    Pour oil into a heavy pot or deep skillet to a depth of about 1.5–2 inches (about 3.5–5 cm). Heat the oil over medium-high heat to 350°F (175°C). If you don’t have a thermometer, test by dropping a small breadcrumb into the oil—if it sizzles and browns in ~30 seconds, the oil is ready.
