Prepare glass
Fill a Collins or highball glass with ice and set aside to chill while you mix the cocktail.

Build the cocktail
In a cocktail shaker add Aviation Gin (2 oz), St. Germain (0.75 oz), fresh lemon juice (0.75 oz) and simple syrup (0.5 oz). If you prefer to use pre-made sour mix, replace the lemon juice + simple syrup with 1.5 oz sour mix.

Shake
Add a handful of ice to the shaker, secure the lid and shake vigorously for about 10–12 seconds until the shaker is cold to the touch and the mixture is slightly frothy.

Serve
Serve immediately with a straw or cocktail pick for the cherry. Advise the drinker to stir lightly before each sip if it sits.
