Prepare Ingredients

    Form portions

    Divide the 1 lb of 80/20 Angus beef into four loose 4-oz portions (for two patties per burger using two portions each, or adjust if making single patties). Do not overwork—gently roll into loose balls and refrigerate briefly while you prepare toppings and heat the skillet.

    Wash and shred the iceberg lettuce, thinly slice the onion into rings, slice the tomato into 1/4-inch rounds, and have pickle slices ready. Butter the cut sides of the buns and set aside.

Cook Patties

    Heat griddle or cast-iron skillet

    Place a heavy skillet or griddle over medium-high heat. When hot, add 1 tablespoon vegetable oil and spread to coat. The surface should be shimmering and very hot for proper smash.

    Smash-cook the patties

    Place a beef ball on the hot surface. Immediately press down firmly with a large spatula or a flat-bottomed press to flatten to about 1/4-inch thickness. Hold the press for 10–15 seconds to set the edge. Season the exposed top with about 1/8 tsp kosher salt and a light grind of black pepper. Cook undisturbed for 2 minutes until browned. Flip and season the cooked side with another 1/8 tsp salt and pepper, then top each patty with an American cheese slice. Cook 45–60 seconds more until cheese melts and edges are crisp but not burned. Repeat for remaining patties. If adding an extra patty, repeat the same process.

    If making stacked burgers (two patties per bun), keep finished patties on a warm plate covered loosely with foil while you toast buns and assemble.

Toast Buns & Assemble

    Toast buns

    Wipe the skillet lightly if there is excess grease, then place buttered bun cut-sides down on the hot skillet. Toast 30–60 seconds until golden and fragrant. Remove from heat.

    Build the burger

    On the bottom bun place shredded lettuce, then add one or two cheese-topped smash patties (depending on whether you want a single or double). Add sliced tomato, onion rings, and pickle slices. If desired, drizzle ketchup and mustard to taste. Top with the bun crown.

Serve

    Serve immediately while the patties are hot and the bun is toasted. Offer extra pickles, fries, or your preferred sides. Note: extra patties may be added at roughly $3.99 each if mimicking the menu.
