Method
Prepare the Beef Rendang
Blend the Spice Paste
In a food processor, blend shallots, garlic, ginger, galangal, lemongrass, and chili paste until smooth.
Sear the Beef
In a large pot, heat cooking oil over medium heat. Add the spice paste and sauté for about 5 minutes until fragrant. Add the beef and sear until browned on all sides.
Add Coconut Milk and Simmer
Pour in the coconut milk, add kaffir lime leaves, turmeric powder, palm sugar, and salt. Bring to a boil, then reduce to a simmer. Cover and cook for about 2 hours, stirring occasionally, until the beef is tender and the sauce has thickened.
Prepare the Rice
Cook the Rice
Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until rice is cooked.
Serve
Plate the Dish
Serve the beef rendang over a bed of jasmine rice. Garnish with boiled eggs, candied anchovy, fried shallots, toasted coconut, house pickle, sambal hijau, and shrimp krupuk.
