Method

Make Roti Canai

Knead the Dough

In a large bowl, mix the all-purpose flour and salt. Gradually add water and knead until a soft dough forms. Let it rest for at least 30 minutes.

Form and Flatten

Divide the dough into equal portions. Take each portion and flatten it with your palms, then stretch it gently to form a thin layer. Brush with ghee or oil, then fold it into a square shape.

Cook the Roti

Heat a skillet or griddle over medium heat. Cook each folded dough piece for about 2-3 minutes on each side until golden brown and flaky.

Prepare Blistered Tomato Curry

Sauté Aromatics

In a pan, heat oil over medium heat. Add chopped onion, minced garlic, and ginger; sauté until fragrant.

Cook Tomatoes

Add cherry tomatoes and curry powder. Cook until the tomatoes blister and soften.

Add Coconut Milk

Pour in the coconut milk, season with salt and pepper to taste, and let simmer for 10 minutes.

Finish and Garnish

Stir in chopped cilantro before serving.

Infuse the Oil

In a small saucepan, heat the vegetable oil over low heat. Add sliced garlic and cook until golden and fragrant. Remove from heat and let cool.
